Today is day one of my7-day vegan challenge! Here's my first vegan recipe (EVER!) and a journey of no dairy or meat products for an entire week (GASP!).
Day 1: Vegan Burgers!

Breakfast: I started the day off by breaking my 3-day cleanse with a bagel (It's vegan!), all-natural peanut butter and honey. Honestly, I think it's because of the cleanse, it was just OK - maybe the cleanse really did change my cravings and taste buds! I also put almond milk in my coffee- mah - better than nothing but not as good as milk!
Lunch: I was really craving chips and dip (it's my jam) so I bought some spicy black bean dip and blue corn chips from Wegman's organic section. Delicious!
For dinner I decided to make these awesome looking vegan burgers (left). I found this recipe (and picture) on Vegan Sandra (she has some great recipes - check it out!). I made a few changes to the recipe (included in the calorie breakdown below). Here are my alterations:

Vegan Burgers
about 20 medium cutlets
The sauce on this 'burger' is a equal parts of vegan ketchup (Heinz is VEGAN!) and vegan mayonnaise. We just made the vegan mayo instead of buying a new ingredient that we would probably never use again. It was super easy with our emersion blender.
I broke the recipe down to be 2.5 patties (makes 20) and a hamburger bun (seems wrong since the word 'ham' is in the title but Arnolds bread is accidentally vegan!) and it turns out to be about
435 calories a pop (9 grams of fat, 830 mg sodium (eek), 114 grams potassium, 74 g carbs, 14 g fiber, 18 g. protein).
It's also packed with Vitamin A (10% DV), Calcium (13% DV), and Iron (22% DV), just to name a few. Not bad! We threw in some Ore-ida tator tots (also accidentally vegan) which are 170 calories to get about 600 calories a serving. The burgers are filling but just OK. I'm in love with the Morningstar spicy black bean burgers in the frozen food aisle. While I prefer the frozen 'burgers', I am glad I tried these out. And, who knew, raw zucchini is delicious on a burger?! Hubs said 'they're not meat... that's for sure'. I think we would miss the meat more if we didn't just get done with the cleanse :). **pics below**
End of day 1: I'm not missing meat and was able to satisfy my cravings with vegan friendly foods! I am, however, missing cheeeeeese!

- 1 medium zucchini
- 3 tsp curry powder
- 3 tsp vegetable stock
- 1 cup whole-wheat flour
- canola oil (4 tablespoons total)
