Do you still have fresh cranberries in your grocery store? If so , go buy a bag and make this delicious relish! It's really easy and SUPER good! (And if you're still trying to eat vegan, this totally is!)
1 12 oz pkg cranberries 1 orange (or 2 small oranges) 1 apple (I used Red Delicious!) 1/2 cup sugar 1/4 tsp salt In the bowl of a food processor, pulse the rinsed cranberries 10-15 times until chopped into small pieces (it has a wonderful floral aroma!). Place in a large bowl. Next, cut the segments out of the oranges, removing as much of the separator skins as possible. I cut each segment open and scraped the flesh out with a sharp knife. Add to the bowl with the chopped cranberries. Next, remove the core of the apple and chop in the food processor until finely chopped. Add to the cranberries and oranges. Add the sugar and salt, and mix. Cover tightly in plastic wrap and refrigerate over night! Tada! Done! I'm planning on adding to turkey sandwiches, grilled chicken salad, and enjoying on its own!
