So this year I planned ahead and bought my Super Bowl supplies early on Thursday (go me!), and I was also being healthy, buying fruit. There are a lot of very healthy people at my small workplace and I think they are starting to rub off on me ;)
Fast forward to Sunday and after a busy morning and afternoon, I realize I had about 30 minutes to prep our contribution to the party. Luckily, I've mastered cutting up pineapples and melons and my husband was willing to help prep the grapes and strawberries. In record time, we had our fruit ready... and then I realized I had forgotten the dip...

Google to the rescue! Or maybe not... every recipe I found for a fruit dip had cream cheese in it! So I visited my fridge again, and found sour cream. After another Google search, I found several recipes for sour cream dip, but nothing that sounded just right. Some needed hours to sit, some required ingredients I didn't have. I needed it now, people! So here's what I came up with, and it was amazing!!
1/2 cup sour cream (less healthy) -or- greek yogurt (more healthy!)
3 heaping teaspoons powdered sugar
1 tablespoon(ish) vanilla
Mix together, tasting and adjusting for sweetness, tangy-ness, and vanillaness. Yes I know I'm making up words. And you're done! Easy! Delicious! It was a big hit, and a great compliment to our healthy Super Bowl offering.
